A "Healthy" Cookie for Lefty Baking Life

Hello all! I hope your weekend has been nice and relaxing. Mine has been filled with baking, decorating my apartment and going to see art...not to worry, there will be updates on all of that this week! Anyways, as is usual for a Sunday evening, tonight's post features the most recent baked good for Lefty Baking Life. If these cookies sound delicious to you, simply donate to the go fund and send me your info and I will ship you some cookies! 

Now on to the cookies. These are supposedly a healthy cookie recipe as there is no sugar in it. However, there is quite a bit of maple syrup so between that, the chocolate, and the raspberries, it is still sweet but not over the top. It is also relatively simple to make. My first "healthy" recipe and I think it went well!

Ingredients: 
1 cup instant oats
3/4 cups whole wheat flour
1 1/2 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
2 tbsp unsalted butter, melted and cooled slightly
1 large egg, room temperature
1 tsp vanilla extract
1/2 cup pure maple syrup
6 tbsp fresh raspberries, diced
2 1/2 tbsp chocolate chips...not gonna lie, I put 3 tbsp in the dough and then a smattering on top

Directions:
Whisk together the oats, flour, baking powder, cinnamon, and salt in a bowl. In a separate bowl, whisk together the butter, egg, and vanilla. Stir in the maple syrup. Add in the flour mixture, stirring until just incorporated. Gently fold in the raspberries and chocolate chips. And I mean gently other wise your raspberries will basically disintegrate.
Chill the dough for at least 30 minutes.
Preheat the oven to 325 and line baking sheets with parchment paper
I used a small ice cream scoop to scoop out the dough onto the baking sheets and then press some chocolate chips onto the top and slightly flatten the cookies.
Bake at 325 for 10-12 minutes.
Mine made 32!

A first look into my apartment

Hello all, happy Saturday! Today is going to be the start of something new, a blog series about my apartment, decorating, living alone, and becoming part of a city. I am so excited about this series and to be able to share another side of my life with y'all! 
 


As you might have seen on my instagram or snapchat (tcurry16), the above is how my apartment started. Everything is looking much more put together now, I just have to decorate. The first room I finished was my bathroom. As you can see, it is a little small and I had to be creative with storage, but I am so happy with how it turned out. 


For me, it is so important to be able to have clean counters in the bathroom. Having a bunch out, stresses me out and makes my mornings much more chaotic. Being able to hide everything in my drawers was vital. My drawers are definitely full, but it is manageable and the cute tray on top of my toilet was the perfect way to have my glasses and lipstick out without being in the way.

I also wanted my bathroom to inspire me. Like most people, I have struggled with insecurities about how I look and it is so easy to allow those to control you when you are getting ready in the morning. I have always loved my inspiration boards which are basically my real-life Pinterest boards. I love to make them and they always put a smile on my face. Having them in the bathroom perks me up in the morning and reminds me to be positive and love myself. Practice a little self-love today and hold your head high...you are fabulous. Hello all! Happy Friday! I hope you are gearing up for the weekend and have some fun plans ahead. My weekend is going to be filled with working, baking, and art and I couldn't be more excited. Not to worry, I will keep you updated on everything and there will definitely be blog post about a lot of my activities in the coming weeks.

Before my fun weekend plans begin though, let's talk about florals. For me, florals are about the least inspired thing ever unless it is in winter. They just kind of seem a little too easy and like designers really didn't have to put in any effort. However, ever rule has an exception and this skirt is the exception for me.

First of all, I love the color and the cut which is ultra feminine and was fun to roughen up with this off-the-shoulder top and thick heels. Pearls were also the perfect finishing touch along with my jean jacket. As fun as this skirt is now, I am even more excited to wear it with tights and a bulky sweater this winter...is it fall yet? Polka Dots and Pink

Hello all! Happy Thursday! It has been a busy week already, but I've been very productive and have lots of fun things to share with y'all this weekend! While I've been busy, I've also been trying to deal with our crazy weather. It has been hot here, but not the super sticky hot that is normally typical for North Carolina in August.

This has been nice because I've been able to experiment a little with different outfits and layers. Plus, I've been able to wear my white jeans! I love the idea of white jeans, but they are definitely hard to wear when it is so hot outside. This weird in-between weather is perfect though because the white jeans are still summer, but you don't freeze in the air conditioning.

I love wearing darker colors with white because it makes the white and the other pieces really pop. Navy is a perfect option because it isn't as harsh as black but the white still brightens it up a lot. I love how these polka dots play against the navy and really stand out with this outfit.

Hello all! I hope you are all doing well today! Gray might be my color of the moment because I went to basically never wearing gray to wearing it multiple times a week. Same goes for stripes! But we will see what happens as my outfits evolve this week.

Although fairly new to my wardrobe, gray is a great option for the end of summer and fall. It is a great neutral that isn't as bold as black, but still allows you to do lots of fun things with your accessories.

I love wearing giant party accessories, like these earrings, with a more professional looking outfit. It adds a little oomph to your outfit and also gives you an excuse to wear those fun party accessories that normally sit in the back of your closet!

The finishing touch for this outfit was the pops of color. I needed something to break up all of the gray. This pink bow bracelet perfectly matched my purse and they were the perfect finishing combination. Maybe tomorrow I'll be able to branch out from gray a little bit. Until next time, XO

Hello all and happy Monday! Yesterday ended up being so crazy and I am so sad I wasn't able to blog because it was National Left-Handed Day! But I did buy a futon for my apartment and get it all assembled! Let me tell you, never have I felt more accomplished than after buying a piece of furniture and putting it together by myself. I am getting so excited about my apartment and there are going to start being posts about it this week as I finish getting it decorated. 

As sad as I am that I didn't blog on National Left-Handed Day, it is not that big of a deal because every day is left-handed day for me. One of the main reasons I named the blog Lefty Living Life is because I am left-handed, but I also identify very strongly as a lefty. It is just one of those aspects of my life that has come to define me. Next year, I think I'm going to have a Lefty party! Maybe I'll even make these cookies.

Let me tell you about these cookies. These are the first thing available on Lefty Baking Life and I am obsessed with them. First of all, it is my sprinkle cookie recipe that I talk about all the time and love. This time though, I mixed up the icing a little and added chocolate chips and somehow they are even better. I am so pleased that another of my own recipes worked out and that it was able to kick off Lefty Baking Life. Ingredients:
1 cup butter, room temp
1 1/2 cups of sugar
1 egg
1 egg yolk
2 teaspoons vanilla
3 cups flour
1 1/4 teaspoons baking soda
1/2 teaspoon cream of tartar
1 teaspoon cornstarch
1/2 teaspoon salt
1 cup sprinkles
1 cup semi-sweet chocolate chips
Frosting: 3/4 cup butter, room temp
2 1/4 cup confectioner's sugar
3 tablespoons heavy cream
1 teaspoon vanilla
1/8 teaspoon salt

Directions:
With an electric mixer, cream the butte and sugar until light, about 2 mins. Add egg, egg yolk, and vanilla. Scrape bowl as needed.
In a separate bowl, whisk together the flour, baking soda, cream of tartar, cornstarch, and salt. Slowly add to the butter mixture on low speed and mix until combined. Gently mix in the sprinkles by hand. Cover and chill for at least 3 hours.
Remove from the fridge and preheat oven to 325. Let cookies sit at room temperature for 15 minutes unless you have chilled them overnight. If so, let them sit for about 30-40 minutes.
Form dough into balls. Bake for 9-10 minutes until the edges are slightly browned. The centers will appear soft. Allow to cool on pan for 3 minutes then transfer to wire rack to cool. They need to be completely chilled before you frost them.
Frosting: With a hand mixer, beat the butter until creamy. Add confectioners' sugar, cream, vanilla, and salt and mix on low speed until combined then increase the speed and mix for about 3 minutes. Add more sugar or cream if too thick or thin.
Place as much frosting as you like on the cookies and then finish with sprinkles. At first, I only frosted some of them, but the frosting really adds something so I would definitely recommend it!

Hello all! Happy weekend! It is still early here because I'm writing this in advance to publish later, but I have lots going on today! I'm starting off this morning with one of my new favorite activities, the Farmer's Market! I love being able to support local farmers, plus I love the food. I've been a couple of weeks in a row and the hand pie lady (no surprise there since I get one every time) and the tomato people now recognize me! It feels like I am finally a regular in a town I've lived in my whole life!

After the Farmer's Market, I am off to work at the Gallery. I am so excited about the show because it is finally all hung and it looks amazing! I want to buy it all for myself! But it is so exciting to be able to walk in every morning and say I did this. I could not be more excited about this job and this opportunity!

Finally, my parents are fabulous and are delivering the last bit of my furniture to my apartment! Now all I have to do is finish getting everything set up and decorate! I am loving the apartment so far and  I will definitely be posting more about it once it is all set up.

Well, enough about that for now, let's talk about clothes for a minute, this is a fashion blog after all! It has been pleasantly cool the past couple of days, which has been the perfect chance for me to start experimenting with layering and transitional pieces. I love wearing a chambray or a jean jacket as an outer layer with fun patterns underneath it. It just adds an extra dimension and the sparkly shoes were the perfect finishing touch. Hello again! I hope your Friday was fabulous and you have some fun plans this weekend. As usual, I will be working this weekend, but I am very excited about my work! So far the gallery has been very new and exciting. It is very different from my previous work and I am definitely learning on the fly, but I am enjoying it at the same time.

I am really enjoying the work so far for two main reasons. First of all, every day is different. I don't have a set list of things that I do every day and I get to set my own to-do list. This is nice because it forces me to take action and think ahead and really think on my feet, which is fun. I also feel like I am learning so much in terms of experience but also in terms of dealing with artists and selling art.

The other thing that I love is that I get to deal with art every day. Whether it is bringing in art, taking inventory, hanging the art, and promoting the art or talking with clients and prospective buyers about the art. I am able to talk and interact with art all day, which is exactly what I want to be doing in my career.

Summer Shades of Gray

Good morning all! I know I said I was going to be blogging more regularly this week, but, to be honest, I've just been putting off this post. Sometimes you just don't have something to say and that has been me lately. I didn't want to post just so I could say I posted, but I actually wanted to be able to engage with y'all in some way.

Anyways, I've definitely been lacking motivation lately. A lot of that has stemmed from the fact that I have been struggling with my health, which makes me not like my pictures. No pictures, no post. But, I am tired of letting my own insecurities about my pictures and how I look get to me so we are back to posting today!

Although I adore this outfit, it is not necessarily bold or new or extremely interesting. But, it is important to have outfits in your arsenal that are cute and easy to wear. You don't want every outfit to be a loud statement making piece. Sometimes, it is nice to have a cute but simple outfit. I love monotone and I love the different shades of gray in this outfit and then the bright shock of pink. Perfect for a summer afternoon. Until next time, XO

Hello all! Happy Wednesday! It is kind of weird for me now as I have Monday off so it feels like Tuesday instead of Wednesday. Whatever day it feels like for you, I hope you are having a fabulous week so far. I am currently living my dream life as I blog this from a bakery that I walked to from my apartment! I could not be more excited about living downtown or about this bakery...I already have a bakery addiction.


As you know, I love this dress and wear it semi-regularly. But it is hard to mix it up first of all because of the very recognizable color. But also, the bow in the back makes it hard to belt or layer with other pieces. So, I typically have to get creative. For me, that means changing up my jewelry, shoes, and accessories so each time I have a different pairing. At least this way I'm not wearing the exact same outfit every few weeks. 


One of the hardest hurdles for me to get over when it comes to creating outfits is wearing the same color in a different shade. For some reason, my brain vehemently opposes this idea, but it always looks so cute when I finally try it. One such color combination that works really well is pale pink and hot pink. The monotone gives the outfit another interesting factor and the pale pink can help to tone down the hot pink. Definitely a combination to try! Until next time, XO

Sprinkle Sandwich Cookies

Hello all! I am sorry I was a little MIA last week...moving and starting my new job ended up being way more time consuming than I expected. No surprise there, but I did not plan very well so blogging had to take a slight back burner. 

However, I am using my first day off since April (!!) to plan out this week a little better and be a little more organized. Moral of the story, I am now back with a full schedule of posts so make sure to stay tuned this week. There are some fun things to come like my first Lefty Baking Life adventure as well as some first looks at my new apartment as I get moved in and situated! 

Anyways, excuse my ramblings and let's get back to the main reason for this post...cookies. I have never been a huge cookie fan because I hate dry cookies without flavor. There is absolutely nothing wrong with a crunchy, crumbly cookie. But, I want it to be that way because the baker intended that, not because they are over-baked or otherwise poorly made. 

So, when my mom first told me she was making sprinkle cookies, I was a little hesitant to say the least, despite my love of sprinkles. However, these turned out to be some of the best cookies I'd ever had. They had a strong flavor of vanilla (which I love) and were soft and moist. Since this discover, I've looked for every possible opportunity to use these cookies. I've drawn shamrocks for St. Patrick's day, made bunny butt cookies for Easter, tried holiday themed sprinkles, and dyed icing.

A couple of weeks ago,  I was scrolling through Pinterest and saw a recipe for sandwich cookies. My first thought was to make sandwich cookies out of my sprinkle cookie recipe because how could that possibly be bad?! It also seemed like the perfect way to say thank you and good bye to my Leland Little family. 

The cookies were a hit to say the least. I made them slightly smaller than usual so it wasn't too big a serving and I used a cream cheese icing instead of my usual icing. I like cream cheese icing for fillings because it is a little thicker so better in large quantities. These really turned out to be a fabulous experiment and they will definitely be featured on Lefty Baking Life soon if you want to try them yourself! Until next time, XO

Ingredients:

Frosting: use a hand mixer to beat the cream cheese until smooth. Add the butter and beat until well blended. Add confectioner's sugar and vanilla and continue beating until smooth.
Place as much frosting as you like on half the cookies and sandwich them together. Put enough to hold the cookies but not too much. You don't want it to ooze out when people take a bite.
This made almost 40 sandwiches for me!

Hello all for the second time today! My first day was so fabulous! My job is off to a great start and I took another load of stuff to my apartment this morning. I also am in the final stages of the logo design for my online consignment store...hopefully more updates on that to come soon.

Pink for a New Chapter

Hello all! Happy August! I can't believe August is already here, this summer has flown by! So, as you know, today is the start of my new chapter! I am so excited about the direction my life is moving and I can't wait to tell y'all all about it!

Yesterday was my last day at my old job and it was definitely bittersweet. I could not be more excited about my new job, but leaving behind all of the people who have become my family over the last year was definitely hard. As sad as I was to leave, I do have lots of things to be excited about and it will just make visiting in the future even more fun. To all of my Leland people who read this, I love y'all and miss you already! Can't wait to see you soon!

My new job at the art gallery officially starts today at 10. There will of course be tons of notifications about my openings and all of that and I can't wait to be back working with art on a regular basis. I have high hopes for this position and it is already going well! I will definitely keep y'all updated on all of the new developments and keep an eye on social media for information about our artists and shows.
